Ingredients
- Curry Chicken:
- 1 1/2 pound chicken, cooked and cubed
- 1 large onion, chopped
- 2-3 large potatoes
- 2-4 tablespoons curry powder
- 3 tablespoons flour
- 1 can chicken stock
- 1/4 stick butter
- cayenne pepper and salt
- Roti:
- 4 cups flour
- 4 teaspoons baking powder
- 1 teaspoons salt
- 1 1/2 cups water
- 3 tablespoons softened butter
- 1/4 cup oil

Step 1
Chicken:
1. Melt butter, brown slightly; stir in curry, flour and
chicken stock.
2. Stir until thick and bubbly
3. Add cayenne pepper, salt, chicken, onion, peppers
and potatoes.
4. Heat through and serve with roti.
Roti:
1. Stir flour, add baking powder and salt.
2. Add enough water to form soft dough.
3. Knead well and leave to relax of ½ hour, covered
with a damp cloth.
4. Knead again and divide into 4 balls.
5. Flour surface and roll out dough to 8-9 inch circle;
spread with butter and sprinkle with a little flour.
6. Cut rolled dough from center to edge, roll tightly
into a cone; press peak of cone into center and
flatten; rest for 30 minutes.
7. Sprinkle flour on surface and roll dough very thin
with a rolling pin.
8. Cook on moderately hot, greased surface for 1
minute; beating with stick while cooking.
9. Turn over; grease with oil and cook for 1 minute.
10. Turn over to the other side; brush with oil; cook 1
minute
11. Remove from heat and crush with a wooden
palette or wrap in a clean towel and crush.
