Ingredients

  • 1 box(18.5) white cake mix
  • 3/4 cup salad oil
  • 3 large eggs
  • 1 cup 7up, ginger ale or club soda
  • 2 boxes( 3 1/2 oz) instant pistachio pudding
  • 1 cup flaked coconut
  • 1 3/4 cups chopped nuts
  • 2 envelopes dry whipped topping mix
  • 1 1/2 cups cold milk

Preparation

Step 1

heat oven to 350. grease and flour 9 x 13 inch baking pan.

in mixer bowl, combine cake mix, oil, eggs, soda and 1 box of pudding mix. beat at medium speed for 5 minutes. fold in 1/2 cup of the coconut and 1 cup of the nuts. pour batter into prepared pan and bake 350 for about 45 minutes.

meanwhile, prepare icing by beating together the topping mix, milk and the remaining box of pudding mix until very thick. spread over cooled cake. sprinkle remaining 1/2 cup coconut and 3/4 cup nuts over all. (if desired, coconut and nuts may be whipped into the icing)
