Cornish Game Hens Steamed in Foil

Ingredients
- 4 Cornish game hens
- 1-16 ” square of foil for each hen
- 1/4 teaspoon sage or thyme
- 1 sprig fresh rosemary
- 1/2 teaspoon salt
- 1-2 teaspoons butter
- fresh ground pepper

Preparation
Step 1
1. Preheat oven to 350.
2. Season each hen with salt, pepper, sage & thyme. 3. Place on foil; top with butter, lay a sprig of
rosemary on top of the hen and wrap foil tightly.
4. Place on baking sheet.
5. Bake for 1 hour.
6. Remove from oven & raise heat to 425.
7. Carefully open foil (watch out for steam!) to expose
hens.
8. Brush with juices & return to oven for 5-10 minutes or till brown.
9. Serve with juices in foil.
*Remove hens from foil, saving juices in pan for gravy, before browning.
