Ingredients

  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup unsifted all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp unsalted butter, melted
  • 1 1/2 tsp vanilla extract
  • 1 bag( 14oz) sweetened flaked coconut
  • 40 hershey solitaire candies

Preparation

Step 1

preheat oven to 325. grease 2 large baking sheets. in large bowl of electric mixer, combine sugar and eggs, at high speed, beat 3 minutes. add flour, baking powder and salt, beat until blended. beat in butter and vanilla. stir in coconut until mixed.

drop dough by rounded 1 tbsp onto prepared baking sheets. with wet fingers, shape into balls. gently press 1 solitaire into each cookie.

bake 15-18 minutes.
