Ingredients

  • 3 cups lukewarm water
  • 1/4 cup honey
  • 1/4 cup butter/ coconut oil or a combo
  • 1/4 cup rye flour
  • 1/2 cup wheat germ
  • 2 1/4 cups whole wheat flour
  • 2 cups ap flour
  • 3/4 cup spelt or emmer flour
  • 1 Tb + 1 tsp salt
  • 1 1/2 Tb yeast
  • Ground Flax seed, citric acid & whole grain enhancer
  • Extra flax seed for topping

Step 1

Mix together all ingredients in stand mixer at speed 1. Put in 5 qt. container & lightly cover (not air tight), and let rise at room temp until doubled (about 2 hours). Put in refrig & use for up to 5 days. On baking day remove a grapefruit sized piece of dough with floured hands. Quickly shape into loaf and put in lightly oiled loaf pan. Let rest for approx 40 min. Score loaf & top w/ flax seeds. Bake in steamed oven at 400 degrees for 40 min.
