Oven Fries with Roasted Garlic

Ingredients

  • 3 large Yukon gold potatoes, halved lengthwise & cut into 1/2" thick wedges
  • 8 unpeeled garlic cloves
  • 3 t olive oik
  • Salt & pepper
  • 2 t chopped thyme
  • 1/4 C parsley leaves

Preparation

Step 1

Preheat oven to 425.
On large rimmed baking sheet, toss potatoes & garlic cloves with olive oil. spread potatoes in even layer, cut sides down. Season with salt & pepper & sprinkle with chopped thyme.
Bake for @ 30 min. or until potatoes are browned on bottom & very crisp.
Peel garlic cloves. Transfer potatoes & garlic to platter, sprinkle with parsley & serve.
