Ingredients

  • Cake:
  • Yield: 1 (9-inch) 3-layer cake
  • 4 1/2 cups all-purpose flour
  • 2 1/4 cups sugar
  • l 1/2 tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 1 cup plus 2 tablespoons butter,
  • diced and softened
  • 2 1/4 cups whole milk
  • 1 1/2 teaspoons uanilla extract
  • 9 large egg yolks
  • Frosting:
  • 1 cup sour cream
  • 1 cup cold butter, diced
  • 2 cups firmly packed dark broum sugar
  • 1 teaspoon salt
  • 5 cups confectioners' sugar, sifted
  • 1 teaspoon uanilla extract

Preparation

Step 1

1. Preheat ouen to 350°. Spray 3 (9-inch.) round cake pans uuith nonstick baking spray uiith flour. Line bottoms of pans uuith. parchment paper; spray ujith nonstick baking
2. For cake: In a large bouul, combine flour, sugar, baktng pouuder, and salt. Add butter, milk, anduanilla; beat at loui speed uuith an electric mixer until combined. Increase speed to high; beat 2 minutes, stopping occasionally to scrape sides of bouul. With mixer on medium speed, add egg yolks, one at a time, beating uiell after each addition. Diuide batter euenly among prepared pans.
3. Bake until a ujooden pick Inserted In center comes out clean, approximately 25 minutes. Let cool in pans on uuire racks 10 minutes. Remoue from pans. Let cool completely on uuire racks.
4. For frosting: Let sour cream stand at room temperature 30 minutes. In a large heauy saucepan, bring butter, brouun sugar, and salt to a boll ouer medium heat, stirring constantly. Remoue from heat; slouuly stir in sour cream.
5. Bring mixture just to a boil ouer medium heat, stirring constantly. Remoue from heat. Gradually add confectioners' sugar and uanllla, beating at medium speed uilth an electric mixer until smooth. Let stand until mixture begins to thicken, approximately 20 minutes, stirring occasionally.
6. Trim tops of layers, if necessary, to make them flat; gently dust off crumbs. On a cake plate, place 1 cake layer; top uuith approximately 3/4 cup frosting. Using an offset spatula, gently spread frosting back and forth, maintaining a 1/2-inch border, until frosting thickens, 1 to 2 minutes. Repeat procedure tujice.
7. Secure center of cake uuith 2 uuooden picks, spaced 3 inches apart. Spread a thin layer of frosting around sides of cake; let stand until set, approximately 20 minutes. Frost top and sides of cake uuith desired amount of remaining frosting. Remoue uuooden picks just before seruing.
