Ingredients

  • 2 lbs ground beef
  • 1 large onion
  • 1 green pepper
  • 1 tsp chili powder
  • 1 tsp white pepper
  • 2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 oz tabasco
  • 1 tsp oregano
  • 1 16oz bottle chili sauce
  • 8 large whole tomatoes
  • 3 16oz cans kidney beans
  • diced onion
  • shredded cheddar cheese

Preparation

Step 1

saute ground beef in heavy skillet until browned, drain off fat.(reserve), put meat into 10 gallon stock pot. chop onion and pepper fine, saute in reserved fat. add to browned meat along with spices. cook in stock pot over high heat, stirring frequently, for several until seasonings are well blended. add chili sauce, tomatoes, kidney beans, reduce heat to simmer. cook 20-30 minutes.

garnish each serving with diced onion and shredded cheese.
