Ingredients

  • 1/4 cup water
  • 4 tablespoons butter or margarine
  • 1 cup sifted all-purpose flour
  • 1/2 tsp salt,optional
  • 4 eggs
  • raspberry sauce

  • raspberry sauce;
  • 1 package (10 oz) frozen sweetened raspberries, partially thawed
  • 1 tablespoon 80-proof brandy

Preparation

Step 1

combine water and butter in non-stick saucepan. heat until butter melted and water boils. lower heat and stir in flour and salt all at once.

cook and stir vigorously until mixture leaves sides of pan and forms a ball.

remove from heat and stir in eggs, one at a time, beating well after each egg is added, mixture will be smooth and glossy.

spray a non-stick baking tin with cooking spray. drop batter by spoonfuls making 16 mound, 3 inches apart.

bake, uncovered in a preheated 400 degree oven for 45-50 minutes until puffed, golden and crisp.

makes 16 cream puffs

puree raspberries in a blender with brandy if desires. makes approximately 1 cup.
