Ingredients
- 2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, room temperature
- 3/4 cup sugar
- 1 egg
- 1 tbsp lemon juice
- Finely grated lemon peel from 1 lemon

Preparation
Step 1
Cream butter and sugar together. Add egg, lemon peel and lemon juice and mix well. Add rest of ingredients and blend well. Divide dough in half and shape into 2 rolls. Wrap in wax paper and refrigerate overnight. Cut into cookies 1/8" thick. Bake at 350F for about 10 minutes. Dust with icing sugar.
