Ingredients
- 1 large head cauliflower, cut into flowerets
- 1/2 white or red wine vinegar
- 1/3 cup olive oil
- 2 teaspoons sugar
- 41/2 teaspoons dried oregano
- 11/2 teaspoons dried basil
- 1 teaspoon dried tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 green peppers, seeded and thinly sliced
- 3 medium carrots, sliced
- 1 bunch radishes, sliced
- 1 small red onion, thinly sliced

Step 1
In large saucepan over high heat water to boiling; cook cauliflower for about 5 minutes or until just tender crisp; do not overcook. Plunge immediately into cold water; drain; place in large bowl. In small bowl or jar, mix well vinegar, oil, sugar, oregano, basil, tarragon, salt and pepper. Pour mixture over cauliflower; add peppers, carrots, radishes and onion. Toss well. Cover and marinate at least 6 hours or overnight before serving.
