Ingredients

  • 3 1/4 cups lukewarm wate
  • 4 cups ap flour
  • 1 cup spelt or emmer flour
  • (or use 5 cups ap flour)
  • 1 cup whole wheat flour
  • 1 cup malted wheat flakes
  • 1 cup whole wheat flakes
  • 1 1/2 Tb salt
  • 1 1/2 Tb yeast
  • Pinch citric acid
  • Oats for top of loaves

Preparation

Step 1

Mix ingredients together on speed 1 of stand mixer. Put in 5 quart bucket, lightly covered (not air tight). Let rest at room temp until dbl, approx 2 hours. Store in frig.baking day remove grapefruit sized piece of dough using floured hands. Work quickly to shape loaves. Slash & top loaves with oatts. Bake in steamed 400 degree oven for 35 min.
