BREAST******Actifry Chicken & Tilda Rice

Ingredients
- 1 tablespoon EVOO
- 1 small jalapeno, halved, seeded and cut into rings
- 1" fresh ginger, peeled and cut into matchsticks
- 1 - 2 cloves garlic, slice or minced (optional)
- 1 - 2 fresh shallots, thinly sliced into rings
- 2 green onions, cut on the diagonal
- 1 package Tilda prepared rice - Cilantro Lime, Coconut and Sweet Chili all work well, as does plain white basmati
- 4 ounces deli chicken, in small dice
- 2 tablespoons Becel
- salt, pepper and lime wedges, to serve

Preparation
Step 1
Saute veggies in Actifry until tender and golden.
Add chicken cubes and cook a few minutes longer, until chicken gets golden.
Add rice, breaking up with a spoon and cook until rice is separated and beginning to get crispy. When almost done, add Becel and cook a couple of minutes longer. Divide between two bowls and serve.
The lime is particularly nice on the cilantro lime and the sweet chili version.
