Preparation
Step 1
1. To make the beef, dry your sirloin steak with a paper towel and score along all sides. (Using the tip of a sharp knife, first make shallow (about 1/8 inch deep) cuts across the grain one way, then the other way (perpendicular to first set of cuts). Repeat on the other side.)
2. Combine all the seasonings in a small bowl and sprinkle evenly onto steak, making sure to get into all the crevices.
3. Add white onions and garlic into instant pot. Place steak in and add chicken broth and bay leaves. Leave yo cook on low for 8 hours.
4. Once steak is cooked, remove it and strain liquid out. Add the white onion, garlic and beef back into instant pot and gently shred it using two forks or meat claws.
5. Add a cup of BBQ sauce and mix to combine everything well.
6. Yo assemble the burritos, add some of the slow cooker beef mixture to the wraps. Add a small handful of the cole slaw salad mix and a squirt of mayo. Wrap and enjoy!
