Ingredients
- Chicken pieces (your choice)
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- Vegetable oil for frying
- 2 Tablespoons lard

Preparation
Step 1
Wash chicken and pat dry. (It's a good isea to cut chicken breasts in vertically half so they will cook the same time as the other pieces.)
Mix flour, salt, paprika and pepper. Heat 1/2 inch of oil and lard in fry pan. Coat chicken with flour mixture (I put the flour mixture in a bag and shake to coat)
Cook chicken in oil over medium heat 15 to 20 minutes or until light brown on all sides.
Reduce heat, cover tightly and simmer 30 to 40 minutes or until thickes pieces are fork-tender. Remove cover for last 5 minutes of cooking to crisp chicken.
