Ingredients

  • 2 sticks unsalted butter, room temperature
  • 3 1/4 cups sugar
  • 5 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp lemon extract
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 3 cups plus 2 tbsp flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preparation

Step 1

1. Preheat oven to 325F. Grease and flour bundt pan, set aside.

2. Put butter and sugar in mixer with paddle attachment and cream until light and fluffy. Add eggs one at a time, mixing well and scraping any unmixed ingredients from side of bowl with rubber spatula after each addition. Beat in milk, vanilla and lemon extract until well blended.

3. Sift the cloves, cinnamon, ginger, nutmeg, flour, baking soda and salt into another bowl, then add to the butter mixture and beat until all ingredients are well mixed.

4. Pour batter into prepared ring mold and smooth over with palette knife. Bake in preheated oven for 60 to 70 mins or until golden grown and skewer inserted in cake comes out clean. Let cool slightly in mold before turning out onto a wire rack to cool completely.
