Rhubarb Muffins

Ingredients
- 1 1/4 cups brown sugar
- 1/2 cup oil
- 1 large egg
- 2 tsp vanilla
- 1 cup buttermilk*
- 1 1/2 cups chopped rhubarb
- 1/2 cup nuts
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp soda
- 1/2 tsp salt
- 1/3 cup sugar
- 1 1/2 tsp cinnamon
- 1 tbsp butter(melted)
- or *1/4 cup Bulk Barn Buttermilk Powder and 1 cup water

Preparation
Step 1
In a mixing bowl combine brown sugar, salad oil, egg and vanilla beat until well blended.
Stir in buttermilk, rhubarb and nuts.
Combine flour, baking powder, soda and salt.
Fill greased muffin tins 2/3 full.
Combine sugar, cinnamon and butter, sprinkle over muffins pressing gently into batter.
Bake 400 for 20 minutes.
