Ingredients
- 4 cups sugar
- 1/4 cup cocoa powder
- 2/3 cup light corn syrup
- 2 cups milk
- 1/2 cup butter
- 1 tsp. vanilla extract
- 2 cups pecan pieces, optional

Step 1
Combine sugar, cocoa, corn syrup and milk in a heavy ssaucepan, cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat 2-3 minutes to wash down sugar crystals from the sides of the pan. Uncover and cook, stirring occasionally, until mixture reaches the soft ball stage or registers 240 on a candy thermometer.
Remove mixture from heat and stir in butter and vanilla. Cool for 20 minutes ro until lukewarm (110). Beat with a wooden spoon or an electric mixer until thick. Stir in pecans. Drop by spoonfuls onto waxed paper or spread into a buttered 13x9 inch pan(if omitting nuts,use a 9x9 inch pan) Cool completely and cut into squares.
