Ingredients

  • 1 ½ tablespoons olive oil
  • ¼ cup finely chopped scallions
  • ½ teaspoon crumbled, dried sage
  • ½ teaspoon dried thyme
  • 4 thin slices toasted baguette, cut on the diagonal
  • 4 extra-large eggs
  • 2 tablespoons light cream
  • ½ cup grated sharp Vermont cheddar
  • Salt and freshly-ground pepper

Preparation

Step 1

Coat the bottom of two oval baking dishes with oil and divide the scallions, sage and thyme among the dishes. Place two slices baguette in each dish. Break two eggs into the dish. Pour 1 tablespoon light cream between eggs in each dish and top with grated cheddar. Bake the eggs in a preheated 375 degree oven for 12-13 minutes, or until the yolks are just set. Place the baking dishes on serving plates lined with napkins and season the eggs with salt and pepper to taste.
