Chilled Shrimp with Basil Lime Vinaigrette

Ingredients
- 1 lb medium shrimp, cooked and cleaned
- 3/4 cup fresh lime juice (about 6 small limes)
- 3 tablespoons grainy mustard
- 1/8 teaspoon sugar
- 1 3/4 teaspoon salt
- 3/4 cup olive oil
- 1/3 cup fresh basil, chopped
- 1 bunch scallions, thinly sliced, including green tops

Step 1
Whisk lime juice, mustard, sugar, and salt. Slowly add oil, whisking constantly to emulsify. Stir in basil and scallions. Pour over cleaned shrimp and refrigerate several hours or overnight. Serve with crusty bread or crackers. Also delicious over pasta!
If you use "large" shrimp rather than "medium," you may want to cut them in half.
You can increase the amount of shrimp up to about 1 1/2 pounds without increasing the marinade. If you use 2lbs shrimp, you will only need to increase the marinade ingredients by .25.
