Roasted Garlic
Roasted garlic cloves are a great spread on bread. They can be added to soy cream cheese for a sandwich spread or to any salsa recipe.

- 2 heads garlic
- 2 tbsp olive oil
- 2 tsp lemon juice
- 1/2 tsp salt
- 1/8 tsp pepper

Preparation
Step 1
1. Preheat oven to 400F. Cut garlic heads in half and place on aluminum foil, cut-side up. Drizzle with olive oil and lemon juice and sprinkle with salt and pepper.
2. Wrap foil around garlic and place on cookie sheet. Bake 35-45 minutes, or until cloves are light brown and feel soft. Cool completely, then squeeze cloves out of their papery covering and refrigerate.

Studies have shown varied results, but the fact remains garlic is a good source of B vitamins, selenium, and manganese, and helps reduce cholesterol. When roasted, it becomes sweet and nutty. Freeze roasted garlic for up to 3 months.
