Chicken Fried Hamburger Steak

Not being able to afford the cube steak called for in most recipes, I used the hamburger I always have. I like this better

Ingredients
- Steaks:
- 1 1/2 pounds lean ground beef
- 1 egg
- 1/4 cup chopped onion
- salt and pepper
- Breading:
- 1 egg, beaten with a little milk
- Soda crackers, about 1/2 sleeve, crushed fine
- in ziplock bag with rolling pin.
- Gravy:
- 1/4 cup grease from frying meat
- 1/4 to 1/3 cup flour
- 2 cups milk
- Salt and lots of pepper

Step 1
Steaks:
1. Mix well.
2. Shape into 6-7 patties.
1.Put egg and milk on medium plate
2. Put cracker crumbs on another plate
3.Dip the patties in the egg, then in the crackers to
coat both sides.
4. Fry in a cast iron pan with a couple of tablespoons
butter or butter flavored shortening; about 5 minutes
on each side or until juices run clear
5. Move to plate; keep warm
Gravy:
1. Put reserved grease in pan used to cook meat
2. Sprinkle flour over grease; whisk well, making a paste
(if paste seems more greasy than pasty, add more
flour, a tablespoon at a time)
3. Whisking constantly, pour in milk.
4. Cook to thicken gravy
5. Add salt and pepper and cook for 2-3 minutes,
until gravy is smooth and thick
6. Be sure to taste to make sure gravy is well seasoned
and flour taste is gone
