Ingredients
- 2 chickens cut in 1/8’s
- 1/2 head peeled and separated garlic or garlic powder
- 1/8 cup oregano
- 1/4 cup red wine vinegar or balsamic vinegar
- 1/4 cup olive oil-optional
- 1/2 cup apricots and or prunes (or other dried fruit mixture- I add more fruit)
- 1/2 cup currants or dried cranberries or raisins
- 1/4 cup green olives (can rinse to remove salt)
- Mix all ingredients except chicken. Marinate chicken a few hours or overnight.
- 1/2 cup brown sugar
- 1/2 cup dry red wine
- 1/4 cup parsley
- Pour over chicken in marinade.
- Bake at 350 1 – 1 1/4 hours
- (Start cooking chicken skin side down then flip over halfway during baking time)
