- 1 cup milk
- 1 clove garlic(optional)
- 1 pound monterey jack cheese, coarsely grated
- 2 tablespoons flour

Step 1
heat the milk and garlic over medium heat until simmering, 2-3 minutes. toss the cheese and flour together in a bowl or a gallon-size ziplock bag until the shreds are nicely floured. whisk the cheese into the milk a handful at a time, waiting until each handful melts before adding more.
when it is all melty and smooth, fish out the garlic clove, pour the mixture into a fondue pot and serve.
makes 2 1/2 cups
