Zucchini Relish for hot dogs

No store bought relish can compare to this. I tried many store brands and always end up throwing them away. Mix a spoonful into mayo for tartar sauce.

Ingredients
- Relish:
- 10 cups zucchini, unpeeled
- 2 large onions
- 2 green peppers
- 3 or more large carrots (more for better color)
- 3 teaspoons salt
- Brine:
- 2 1/2 cups vinegar
- 1 teaspoon celery seed
- 1 teaspoon turmeric
- 4 cups sugar
- 1 teaspoon pepper
- 3 teaspoons cornstarch

Step 1
Relish:
1. Grate the zucchini, onion, peppers and carrots
2. Add the 3 teaspoons of salt
3. Mix
4.Let set overnight; drain well
Brine:
1. Bring to a boil
2. Add the 3 teaspoons cornstarch mixed with a small
amount of water (to make a paste) and add to the
syrup.
3. Combine with the drained ground ingredients and
boil 3-4 minutes.
4. Quickly put into hot jars while still at the boiling
point and seal in hot water bath for 10 minutes
Mix a spoonful into mayo for tartar sauce.
