Ingredients

  • To start:
  • 1 1/2 T yeast
  • 2 cups warm water
  • 2 cups fresh ground whole wheat flour
  • *
  • Add:
  • 1 1/2 T gluten
  • 1 1/2 T dough enhancer/lechithin
  • 1/4 cup butter or oil
  • 1/3-1/4 cup honey
  • 1 T salt
  • 3-4 cups whole wheat flour
  • 1/2 cup potato flakes (to help bread stay fresher)
  • (1/2 cup left-over oatmeal, if desired!)

Preparation

Step 1

Mix first 3 ingredients together and let sit until double (15-30 minutes). (This step is called a sponge and gives the yeast a head start.)

Add remaining ingredients and knead (about 8 minutes in the mixer). Place in oiled bowl and cover. Allow to rise until double (about 30-45 minutes). Punch dough down and shape into 2 loaf pans. Cover and let rise again until double (20-30 minutes).

Bake for 30 minutes. Oil or butter top of bread for a nice shiny crust.
