Ingredients
- To start:
- 1 1/2 T yeast
- 2 cups warm water
- 2 cups fresh ground whole wheat flour
- *
- Add:
- 1 1/2 T gluten
- 1 1/2 T dough enhancer/lechithin
- 1/4 cup butter or oil
- 1/3-1/4 cup honey
- 1 T salt
- 3-4 cups whole wheat flour
- 1/2 cup potato flakes (to help bread stay fresher)
- (1/2 cup left-over oatmeal, if desired!)

Preparation
Step 1
Mix first 3 ingredients together and let sit until double (15-30 minutes). (This step is called a sponge and gives the yeast a head start.)
Add remaining ingredients and knead (about 8 minutes in the mixer). Place in oiled bowl and cover. Allow to rise until double (about 30-45 minutes). Punch dough down and shape into 2 loaf pans. Cover and let rise again until double (20-30 minutes).
Bake for 30 minutes. Oil or butter top of bread for a nice shiny crust.
