Ingredients
- 1 lb. Boneless Pork Country- Style Ribs or Round Roast
- 2 Tbsp. Olive Oil
- 1 Med. Onion, cut into thin wedges
- 1 Med. Green or Red Sweet Pepper, seeded & coarsely chopped
- 2 Garlic Cloves, minced
- 1 141/2oz. Can Diced Tomatoes
- 1/4 C. Dry Red Wine
- 1 tsp. Instant Chicken Boullion Granules
- 1 tsp. Dried Italian Seasoning, crushed
- 2 C. Torn Fresh Spinach
- Soft or Fried Polenta
- Shaved Parmesan Cheese

Preparation
Step 1
Trim fat from pork. Cut pork into 2-in. pieces. In a lg. skillet, heat 1 Tbsp. of the oil over med. heat. Brown meat in hot oil. Drain off fat. In the same skillet, cook onion, pepper & garlic in the remaining 1 Tbsp. oil over med. heat for 8-10 min. or till tender, stirring occasionally. Add meat, undrained tomatoes, wine, bouillon granules, italian seasoning & 1/2 tsp. salt. Bring to a boil; reduce heat. Cover; simmer about 1 hr.or till meat is tender. Stir spinach into mixture. Serve stew with soft or fried polenta & parmesan cheese. Garnish with fresh rosemary or oregano.
