Apple Crumble Cake

Ingredients
- Filling:
- 1 C flour
- 1/2 C cornstarch
- 1/3 C sugar
- 1 tsp baking powder
- 3/4 C butter, softened
- 1 egg, lightly beaten
- 7 C sliced peeled apples
- 2 tsp lemon juice
- 3 T sugar
- 1 T cornstarch
- 1 tsp each cinnamon and allspice
- 3/4 C raisins
- Topping:
- 3/4 C flour
- 1/2 C sugar
- 1/4 C butter
- 2 tsp vanilla

Preparation
Step 1
In large bowl, mix together flour, conrstarch, sugar and baking owder. With pastry blender cut in butter until small crumbs. Pour egg over top; stir with fork until dough begins to form. Press onto bottom of greased 9-inch springform pan; refrigerate for 30 minutes.
Filling: In bowl, toss apples with lemon juice. Stir together sugar, cornstarch, cinnamon and allspice; toss with apples to coat. Add raisins and toss to mix. Arrange evenly over base in pan.
Topping: In bowl, combinbe flour with sugar. With pastry blender or 2 knives, cut in butter until mixture is brumble. Sprinkle with vnailla, mixing in with fork. Bake in centre of 350F oven for about 1 hour or until golden and apples are tender. Let cool for 15 minutes on rack; remove side of pan. Serve warm or let cool completely.
