Ingredients

  • 8 oz. small elbow macaroni
  • 1 1/4 cups half and half
  • 1/2 yellow onion, finely diced
  • 3 tea. hot sauce of your choosing
  • 2 cups grated Cheddar cheese
  • 1 1/2 Tbsp. flour
  • 1 /.2 cup plain bread crumbs
  • 1/2 tea. cayenne pepper

Step 1

Cook macaroni in boiling salted water until just short of done. (Noodles should be al dente - slightly chewy)

Heat oven to 400 degrees. Butter a 9x13 baking dish.

Bring half and half, onion, and hot sauce to a simmer in a large saucepan over medium heat.

Toss Cheddar cheese and flour together in a bowl so cheese is mostly coated; add mixture to half and half. Whisk until sauce is smooth. Return sauce to simmer and let cook another 2-3 minutes.

Add pasta to sauce and stir to combine.

Spread pasta mixture into baking dish.

Toss bread crumbs with cayenne pepper in a small bowl. Sprinkle on top of pasta.

Bake mac and cheese until heated through and bread crumbs begin to brown, about 20-30 minutes.
