Ingredients

  • 1 1/2 lbs fresh figs stemmed and cut in half---use mission figs
  • rind of 1 lemon grated
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 tspn vanilla extract or 1 bean split and scraped if you have it
  • 1/2 tspn--or more brandy to taste

Step 1

Combine all ingredients in a heavy sauce pan

Bring to a boil and reduce to a simmer until figs are very soft and most of the liquid has evaporated==about 1 hour

==stir frequently to avoid burning

Keep in refrigerated container

should last a few weeks
