Ingredients

  • 3/4 C milk
  • 1/3 C olive oil
  • 1 C fresh baby spinach leaves, chopped
  • 1/4 C fresh basil leaves, chopped
  • 1/4 C dried tomatoes, (not oil packed) chopped
  • 1/4 C pitted kalamata olives, chopped
  • 2 C flour
  • 2 t baking powder
  • 3 T crumbled feta cheese
  • 1 T pine nuts

Preparation

Step 1

1. Prehear oven to 425 degrees. Line baking sheet wtih parchment paper. In bowl, combine milk, oil, spinach, basil, tomatoes and olives. In large bowl combine flour, baking powder and 1/2 t salt. Make a well in center of flour mixture. Add milk mixture all at once; with fork stir til moistened.
2. Gently knead dough on lightly floured surface until dough holds together. Pat into an 8 x 8 inch square. Cut into 9 squares.
3. Place biscuits 1 inch apart on baking sheet. Brush lightly with milk. Sprinkle with feta cheese and pine nuts. Bake 15 minutes or until golden. Cool slightly before serving.
