To make ahead: prepare as directed through step 2. place patties in a lightly greased aluminium foil lined pan. cover and hill 24 hours. let stand at room temperature 10 minutes. proceed with recipe as directed.

- 1/2 c mayonnaise
- 2 tbs drained capers
- 4 tsp chopped fresh dill
- 1 1/2 tsp lemon zest
- 4 tsp fresh lemon juice
- 1 tsp white wine vinegar
- kosher salt to taste
