Summer Sausage

Judy's home made sausage. Really good and freezes well. Definetly make for the holidays.

Ingredients
- 5 # Hamburger
- 2 1/2 tsp garlic salt
- 2 1/2 tsp coarse ground pepper
- 2 1/2 tsp mustard seed
- 1 tsp hickory liquid smoke
- 1/2 tsp whole black peppercorns
- 1 Tbs crushed red pepper
- 5 rounded tsp mortons quick salt

Preparation
Step 1
Mix seasonings and hamburger. Put in refrigerator with tight lid overnight.
2nd day mix again.
3rd day divide into 5 rolls, 1# each.
Place on broiler rack and bake for 8 hours in 150 oven. While baking turn rolls every 2 hours.
Cool, wrap in foil and freeze.
