Ingredients

  • 1/2 cup plus 3 tbsp. vegetable oil, divided
  • 1 cup chopped mushrooms
  • 1 stalk finely chopped celery
  • 2 cloves garlic, minced
  • 1 can (14 oz.) artichoke hearts, drained and chopped
  • 1/3 cup chopped green onions
  • 1/2 tsp. dried oregano
  • 1/4 tsp. crushed red pepper flakes
  • 1 cup grated cheddar
  • 1 cup grated mozza
  • 2 eggs, slightly beaten
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1/4 cup milk

Step 1

Heat 3 tbsp. of the oil in a skillet over medium-high heat. Cook and stir mushrooms, celery and garlic in hot oil until celery is tender. Remove from heat. Stir in artichoke hearts, onions and spices. Add cheeses and eggs; mix well. Set aside.

Combine flour and salt in medium bowl. Blend remaining 1/2 cup oil and the milk in a small bowl. Add to flour mixture and stir with a fork until mixture forms a ball. Press dough into bottom and 1" up sides of a 13" x 9" pan. Bake in preheated 350 degree oven for 10 minutes. Spread artichoke mixture on baked crust. Continue baking for 20 minutes more or until centre is set. Cool slightly. Cut into squares. Serve warm.
