Artichokes Provencal

Ingredients

  • 1/2 Onion, chopped
  • 2 Garlic Cloves, chopped
  • 1 tbs Olive Oil
  • 1/2 cup White Wine
  • 2 Tomatoes, chopped
  • 2 9-oz. packages frozen artichoke hears
  • 3 tbs water
  • 1 strip lemon zest
  • 1/2 tsp salt
  • Chopped mixed olives
  • Fresh Basil

Preparation

Step 1

Cook 1/2 chopped onion, 2 chopped garlic cloves and a pinch of salt in a skillet with 1 tbs olive oil, 5 minutes. Pour in 1/2 cup white wine and reduce by half. Add 2 chopped tomatoes, tow pkgs frozen artichoke hearts, 3tbs water, 1 strip lemon zest and 1/2 tsp salt. Cook, covered, 6 minutes. Stir in chopped olive, basil, S&P.
