Ingredients
- 1 Tbsp olive oil
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 lb. cooked ham, diced into half-inch cubes
- 3 stalks celery, chopped
- 2 cans black-eyed peas, drained
- salt and pepper to taste

Step 1
-Saute the onions and ham in the olive oil in a large skillet until onions just begin to soften.
-Stir in the garlic and cook 1-2 minutes.
-Add the black-eyed peas and stir until heated through.
-Season with salt and pepper to taste.
-Serve over rice.
