Ingredients

  • Dressing:
  • 2 pkgs. of frozen black eyed peas
  • 2 whole peppers of any color but green, diced
  • 6 green onions, diced
  • 2 handfuls of fresh spinach
  • 2 handfuls of arugala
  • 1/3 cup of red wine vinegar
  • 1 cup olive oil
  • 2 1/2 tablespoons coarse whole grain mustard
  • 2 to 3 minced garlic cloves
  • 1 1/2 teaspoon kosher salt
  • 3/4 teaspoon pepper

Preparation

Step 1

In a large pot filled with boil water, empty both bags of black eyed peas and boil for about 7 to 8 minutes.

Drain and let cool a bit.

Dressing:

Combine all the ingredients except olive oil. Then whisking, carefully and slowly drizzle olive oil in a steady, thin stream into mixture. Keep whisking until all the oil is immulsified into a thick creamy dressing.

Pour dressing over warm peas. Add the remaining diced ingredients, Toss to serve.
