Refried Beans (Crockpot)

We got this recipe from BAM and tried it with black beans - yum!

Ingredients

  • 1 onion, peeled & halved
  • 3 c. dry pinto beans
  • 1/2 fresh jalapeno (seeded & chopped)
  • 2 Tbsp minced garlic
  • 5 tsp salt (BAM uses less)
  • 1 3/4 tsp black pepper
  • 1/8 tsp ground cumin (BAM uses a little more)
  • 1 tsp chili powder
  • 9 cups water

Preparation

Step 1

Place all ingredient in crock-pot, then add water & stir to combine. Add more water if needed as beans cook. Note: if more than 1 cup evaporates during cooking, then temp is too high.

Cook on high for 8 hours.

Once beans have cooked, drain them, reserving liquid. Mash the beans and add reserved liquid fro desired consistency.
