Mushroom Smoked Gouda soup

Ingredients
- 1/2 cup butter
- 1/2 cup all- purpose flour
- 1/2 tsp. pepper
- 1/2 tsp. nutmeg
- 1 carton (32 oz.) chicken stock (No-Chicken Broth)
- 1/2 cup cooking sherry or more chicken stock
- 1/2 cup heavy whipping cream
- 1/2 pound sliced mushrooms ( I used baby portabellas)
- 2 garlic cloves, minced
- 2 cups shredded Smoked Gouda cheese

Preparation
Step 1
In a large saucepan, melt butter. Add mushrooms and cook until tender, about 4-5 minutes. Add garlic and cook an additional 1 minute. Stir in the flour pepper, and nutmeg until smooth; gradually add the broth, sherry, and cream. Bring to a boil, reduce heat; and simmer for 5-6 minutes.
Add cheese; cook and stir until melted.
