- 1 1/2 teaspoons garlic salt
- 1 teaspoon ground chipotle chile pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 (3 1/2 pound) pork loin roast

Step 1
Combine garlic salt, chipotle chile pepper, cumin, and coriander; rub over pork. Cover and refrigerate for 2 to 8 hours. Let stand at room temperature for 30 minutes before cooking.
Preheat oven to 375. Place pork on a rack and bake for 1 hour or until a meat thermometer inserted into thickest portion registers 145 or desired degree of doneness. Carefully transfer pork to a serving platter or carving board, and let stand 10 minutes before carving.
