Ingredients

  • C nuts, eg. hazelnuts, almonds, walnuts or pistachio or in combination:
  • 2 Eggs
  • 2 Egg Whites
  • 1 tsp. vanilla extract
  • 1 C. sugar
  • 2 C all purpose flour
  • 1 tsp. baking soda
  • Chocolate chips and diced macadamia nuts
  • Chocolate chips and almonds (slivered or chopped)
  • Almonds and maraschino cherries
  • add 2 tsp instant coffee to jazz up a mocha flavor
  • experiment to your special taste

Preparation

Step 1

Pre head over to 325 F. Lightly spray or wipe a large baking sheet or biscotti pan with vegetable oil.

In large bowl with electric mixer combine eggs, egg whites and vanilla. Mix until well combined.
Add sugar, flour and soda. Mix until dough forms, stir in nuts. (Do not overmix)

With floured hands, take sticky dough and form a flattish log on sheet pan. Bake 40 minutes, Remove from oven and cool 10-15 minutes.

Reduce head to 275F. On cutting board, slice logs across or diagonally into 3/4 inch thick slices. Arrange slices on baking sheet and bake 10, 12, or 15 minutes to crisp. Turn slices and bake for 12 minutes. Turn heat off and leave in over to crisp for 10-15 minutes. Remove, cool completely and store in a tightly closed container.

Substitute 1/2 cup cocoa for some of the flour for a chocolate cookie base.

**1/2-3/4 cup chocolate chips are good to compliment any cookie

almonds and cherrie3s (maraschino)
add 2 teaspoon instant coffee to jazz up a mocha flavor
