Chicken Marsala

Ingredients
- 4 Tbs Butter
- 4 shallots chopped fine
- 1/4 cup dry marsala wine(not cooking)
- 1 tsp lemon juice
- 4 Boneless skinless chicken breasts
- 1/2 lb sliced mushrooms
- 1/2 cup heavy cream

Preparation
Step 1
1. Lightly salt & pepper breasts.
2. In frying pan, melt 2 TBS butter and saute chicken until lightly browned, but not cooked through, couple minutes per side.
3. Remove chicken from pan.
4. Add remaining butter to pan, add add mushrooms and shallots. cook until mushrooms are lightly browned.
5. Add marsala and bring to a boil, scraping to deglaze bottom of pan.
6. Add lemon juice and heavy cream and bring back to boil.
7. Season with salt & pepper.
8. Return chicken to pan for a few minutes to finish cooking.
