Ingredients

  • 1 Cup Light Corn Syrup
  • 3 Tablespoons Sugar
  • 1 Tablespoon Butter or Margarine
  • 1/8 tsp. Salt
  • 1 Cup Evaporated Milk or Light Cream
  • 3 Eggs (beaten)
  • 1 Cup Pecans (chopped)
  • 1 tsp. Vanilla
  • 1/2 Cup Raisins
  • 1 Unbaked 9" Pastry Shell

Preparation

Step 1

Combine syrup, sugar, shortening and salt in saucepan. Cook and stire till boiling; cook 1 minute more. Remove from heat and stir in evaporated milk; cool. Gradually stir the cooled syrup mixture into beaten eggs. Stir in pecans and vanilla. Sprinkle raisins on bottom of pastry shell; pour the pecan mixture over the raisins. Bake at 400° for 35 minutes.
