Ingredients

  • 1 tablespoon sliced almonds
  • 1 tablespoon olive oil, divided
  • 4 (5-oz.) tilapia fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped onion
  • 2 tablespoons dry white wine OR low sodium chicken broth
  • 1/2 cup pitted sweet, fresh cherries, pitted and halved
  • 1/2 cup low sodium vegetable broth
  • 1/2 teaspoon dried thyme

Preparation

Step 1

COOKING INSTRUCTIONS:
Place the almonds in a small skillet over medium-low heat; cook until lightly toasted and fragrant, about 4 minutes; transfer to a bowl. Heat 2 teaspoons of oil in a large skillet over medium-high heat. Sprinkle fish fillets with salt and pepper, place them in the skillet and cook until just opaque in the center, about 2 minutes per side. Transfer to a plate and keep warm. Heat remaining oil in the skillet; add chopped onion and cook for 2 minutes or until softened, stirring frequently. Add wine (or broth); bring to a boil, stirring constantly and scraping up all of the browned bits from the bottom of the pan. Add cherries, broth and thyme; bring to a boil and cook until most of the liquid is evaporated, about 1 minute. Top fish fillets with cherry mixture and sprinkle with toasted almonds.

SERVING SUGGESTION: Steamed asparagus and steamed new potatoes.
GLUTEN FREE: Make sure wine and broth are gluten free.
