Ingredients
- DRESSING:
- SALAD
- 1 cup basmati rice cook as directed
- 1 clove garlic (crushed with press)
- 1/4 cup cilantro lime dressing
- 1/2 cup low fat plain yougurt
- 1/2 tsp ground coriander
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 4 cups baby spinach
- 1 cup frozen peas, thawed
- 1 lg ripe mango
- 3 tsp sliced almonds
- scallops
- sesame seeds
- 1 sm pablano
- cilantro
- 1 /c cup fresh lime juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup veg oil

Preparation
Step 1
Salad:
Cook rice and let cool completely.l
In large bowl mix garlic, cilantro lime dressing, coriander, cumin, salt, pepper, and yogurt. add rice. Mix with all other ingredients then garnish with cilantro.
Dressing:
Char the pablao and remove skin.
Puree pepper in processor along with about 20 springs of cilantro, 1/2 lime juice, 1/4 tsp salt and pepper. With machine running add 1/4 veg oil until blended.
OPTIONAL:
Marinate scallops in cilantro dressing 10-15 minutes. Coat with sesame seeds and brown in skillet.
