Grasshopper Torte


This is my husband's recipe that he made when he was in college for culinary classes.
It is minty and a great light dessert to serve

  • Crust:
  • 2 packages Nabisco chocolate wafers
  • 1-1/4 stick butter
  • Filling:
  • 1 cup milk
  • 60 marshmallows (large)
  • 2 jiggers of creme de cocoa
  • 2 jiggers of creme de menthe
  • 1 pint whipping creme

Preparation time 30mins
Cooking time 40mins


Step 1

crush wafers into fine crumbs (use processor or blender if possible).
Melt butter and add to crumbs.
Pat crumbs firmly into bottom and side of 9 x 13 baking dish
(hold back 1/2 cup of crumbs for topping)

Bring milk almost to boil, add marshmallows stirring over a low heat until completely melted.
Let mixture cool and then add creme de cocoa and creme de menthe.
Whip cream to firm peaks and then fold into marshmallow mixture.

Pour marshmallow filling over crust in dish.
Sprinkle reserved crumbs on top.

Cover with plastic wrap and put immediately into freezer.

Freeze 24 hours before serving dessert.

Take out 30 minutes before serving and cutting.
