Ingredients
- Fresh Milanese Sauce
- 2 teaspoons olive oil
- 2 cups grape tomatoes, halved lengthwise
- 1 large shallot, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup fresh basil leaves
- 1/4 cup dry red wine
- Chicken Milanese
- 1 1/2 tablespoons olive oil
- 1/2 cup Panko
- 1/4 cup grated parmesan cheese
- 4 skinless, boneless chicken breasts

Preparation
Step 1
Prepare sauce and keep warm.
Heat oil in skillet.
While pan heats, combine panko and cheese in a shallow dish. Coat both sides of chicken with cooking spray and dredge in panko.
Cook chicken in hot oil over medium heat 7 minutes on each side or until done. Spoon sauce over chicken
