Ingredients

  • 3 cups lukewarm water
  • 1/4 cup honey
  • 1/4 cup butter &/or coconut oil or combo of both
  • 1/4 rye flour
  • 1/2 cup wheat germ
  • 2 1/4 whole wheat flour
  • 2 3/4 cup ap flour
  • 1 Tb + 1 tsp salt
  • 1 1/2 Tb yeast
  • Citric acid, flax

Preparation

Step 1

Mix ingredients in stand mixer on 1 speed for 5-10 min. Put in lg rising bucket & let sit at room temp approx 2 hours until doubled.
Put in the frig. Do not use for approx 24 hours.
To bake:
Flour hands & remove a grapefruit sized piece of dough, shape quickly, let rise approx 40 min.
Bake at400 degrees for approx 50 min.
Dough is good for approx 5 days.
