Ingredients
- 3/4 cup yellow cornmeal
- 1/2 cup all purpose flour
- 1 tbsp granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp cayenne pepper
- 2 large eggs, at room temperature
- 2/3 cup milk, at room temperature
- 2 tbsp vegetable oil
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup frozen corn kernels, thawed and drained
- 3 tbsp chopped drained pickled jalapeno peppers
- nonstick baking spray

Preparation
Step 1
1. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and cayenne. Set aside.
2. In a small bowl, whisk together eggs, milk and oil. stir into cornmeal mixture until just blended. stir in cheese, corn and jalapenos.
3. Spray cake pop wells with nonstick baking spray. Fill each well with about 1 tbsp batter. bake for 4 to 6 minutes or unitl a tester inserted in the center comes out clean. transfer morsels to a wire rack to cool slightly. Repeat with the remaining batter.
