Ingredients

  • 1/2 cup chopped onion
  • 1 tablespoon extra-virgin olive oil
  • One 10-ounce box frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup feta cheese
  • 1/2 teaspoon pepper
  • 1 puff pastry sheet, thawed

Step 1

Cook onion in oil until soft. Stir in spinach, feta and pepper; puree in a food processor. Cut twelve 2 1/2-inch rounds from puff pastry; prick each with a fork. Press into a mini-muffin pan, then fill with the spinach mixture. Bake at 375° until golden, about 20 minutes.
